Strawberry Popsicles



Recently I found a great organic strawberry farm near our place.  My mom tagged along with us and we all had a lot of fun.  We came home with a 7 litre basket full of strawberries and now the big task of what to do with all of the strawberries.  Unfortunately the strawberries weren't very sweet but they were very juicy.  I gave a shot at a strawberry donut recipe but that was a major fail.  Next up was strawberry popsicles!  I've been wanting to make popsicles at home for awhile now.  These were so simple to make and were really good.  You should adjust the amount of sugar to how sweet your strawberries are.  I always get weary of adding lemon juice to recipes that I want sweet to I significantly reduced the amount.  These were a great treat and I hope you give them a try!

Strawberry Popsicles
Adapted from The Slow Roasted Italian

1 pound ripe strawberries, washed, hulled and cut in half
1-4 tbsp sugar (this will vary on how sweet your strawberries are)
1/4 tsp lime or lemon juice

In a medium bowl, mix the strawberries and sugar.  Let sit for 30 minutes or until the juice has been released.  In a food processor, add the strawberries and lemon juice.  Puree until smooth.  Pour into popsicle moulds and freeze until firm.  I left mine in the freezer overnight.  This recipe gave me 7 popsicles but this will vary depending on how big your popsicle mould is.

  4. How gorgeous are these mashAllah! I bet your kids had a great time picking berries, and hopefully it wasn't too hot lol.
    I've been seeing popsicle molds everywhere lately, and I've been tempted to pick up a pack too.. Maybe once I get back from California, inshAllah.

    1. They had a great time! It was hard to get Bilal from crushing the berries with his feet when he was walking :) You could smell the strawberries as we walked up the hill. The weather was perfect! And when we were done we saw they had a stone making oven where they were making pizza. Bilal was calling it "Fire Pizza" and it was sooooo good. :) Hasan wants to go cherry picking next which is in the west end so that will be a bit of a drive. In September we go apple picking as well.

      I bought my popsicle moulds a couple of years ago and this is the first time I used them :) So simple and such a great treat for kids..I think I will be using them much more this summer...I really want to try fudgesicles soon!

  5. we are planning on going strawberry picking soon as well. My little one has started walking now. So, i think he will have a good time running through the bushes...lol.
