Mango Smoothie


Mango season is just about over.  This is one of the ways we were enjoying them this summer.  They never lasted long so it was always difficult to get a picture of them.  Bilal has been loving smoothies this summer. It all started with the Green Monster.  They are a great way to get him to have some extra fruit.  I love the citrus flavour that the orange juice brings.  I find these smoothies are best if had immediately.  They thicken up while sitting in the fridge.

Cookies and Cream Rice Krispies Treats without Gelatin {SRC}


It's Secret Recipe Club time again!  This month I was assigned Shockingly Delicious written by Dorothy.  I was so excited when I saw that I was assigned Dorothy's blog.  I have been following her blog for a few months now and had already bookmarked a couple of recipes to try!  But I still spent time to go through all her recipes and found some I will definitely be making in the future like this chili and her Chicken Teriyaki Meatballs.  I also have my eye on Dorothy's Green Tomato Chutney as our garden is overflowing with green tomatoes.  But in the end I chose Cookies and Cream Rice Krispies Treats to make for today's reveal.  My main reason was that Hasan's favorite cookies are Oreos and he also loves Rice Krispies Treats so it was a perfect combination.

Fresh Mango Ice Cream (Eggless, No Machine & Low Fat)


I came across an ice cream recipe on Crunchy Creamy Sweet that only used 3 ingredients: evaporated milk, sugar and vanilla.  I was very curious and excited hoping this would be the low fat ice cream I was looking for!  It is a soft serve ice cream.  I tried the original recipe but haven't been able to get the amount of sugar to our liking.  I found it amazing how 1 tin of evaporated milk chilled whipped up like whipping cream and in only 40 seconds!  I wanted to give this ice cream another try and I also had some mangoes that were on the verge of going bad so I decided to adapt the recipe to make mango ice cream.  We all really enjoyed it!  The mango version isn't soft serve since the water from the mangoes freezes.  We actually prefer this ice cream to a post I did back in July.  It isn't as sweet and has a nice fresh mango flavour.  Since no ice cream machine is used it is a bit time consuming since you have to keep putting it in the freezer and then taking it out to whip up.  If you do decide to use your ice cream maker, for mine it was too much ice cream and I would have to do it in 2 steps.

Strawberry Sour Cream Ice Cream (Eggless)


Summer is over...school started last week.  It seems like it was just yesterday when school ended.  The summer just flew by especially with Ramadan right in the middle.  This summer I've been experimenting with making ice cream.  Mostly with trying to make a good low fat ice cream.  It is still a work in progress.  Amidst all that I made this Strawberry Sour Cream Ice Cream.  It's not low fat but what I loved about it was there was no custard to make.  It is extremely simple to make.  Everything is done in the food processor, then chilled and next you process it in your ice cream maker.  The outcome of this ice cream really depends on your strawberries.  If you have some super sweet strawberries this ice cream won't be overly sour.  Unfortunately my strawberries were sour and I didn't check before I made it.  So my ice cream was a little sour but we all enjoyed it regardless.

Oatmeal Date Muffins


Seven years ago my husband and I went to PEI.  We stayed in the cutest inn called The Great George.  I can't remember if it was everyday or just on weekends, but they would serve complimentary breakfast in the lobby.  They would also have coffee, tea and treats in the lobby 24 hours a day.  You could buy the recipes for all these tasty treats in the lobby.  We enjoyed everything so much that I bought a recipe book.  This recipe book had a recipe which we didn't have at the Inn.  It was for these muffins.  I made a few tweaks to the recipe to suit our tastes.  This is a mildly sweet muffin that is perfect for breakfast.  It is sweetened with honey and dates.  I had made these this past Ramadan to have during Sehri (our meal prior to the sun rising).  I added some flaxseed to bump up the fiber in them and mixed in a little whole wheat flour.
