Garlic Rice Pilaf


This is a simple rice dish that is easy to make.  We love to have it with fish.  It's a great change up from just plain white rice.  It won't over power your main dish.  I usually use bottled lemon juice because I'm usually in a hurry but for best flavour use freshly squeezed.  Although it is easy to make it does bake for about 40 minutes.

Apple Coffee Cake



I love desserts with apples in them.  This recipe was originally a Cranberry Coffee Cake.  It used fresh cranberries.  I don't think I've ever had fresh cranberries and I was scared if I used them the cake would be too tart.  The first time I made it I skipped the cranberries and the cake came out too dry.  For my second attempt I replaced the cranberries with apples sprinkled with brown sugar and cinnamon.  Everyone liked it, especially my mom.

Whole Wheat Hamburger Buns


When I make burger buns I usually make my Honey Wheat Sandwich Buns.  It uses a combination of whole wheat and all-purpose flour.  I am always reluctant to make baked good with all whole wheat flour.  I'm scared they will turn out really dry.  I recently saw this recipe on The Galley Gourmet and was curious how they would turn out.  Nicole had great reviews about these buns so I decided to give it a go.  It had 2 unusual ingredients in them...potato flour and orange juice.  I found potato flour at Bulk Barn.  Nicole told me that the potato flour helps to keep the buns moist and the orange juice contributes to the nutty taste.

Sauteed Shredded Zucchini


I keep reading other bloggers writing about how their garden is overflowing with zucchini.  I planted zucchini this year and it did better than last year.  Last year I got one zucchini.  This year I've gotten 6 and now half my plant has died.  There were a few more coming but those have died.  I have hope for one more.  I don't think 6 zucchini is "overflowing".  But my garden IS overflowing with green beans.  I have yet to make anything with them.  So far I've given some to my mom and sister-in-law.  I had green chillies and also gave those away but now it seems like they've stopped coming.
