Coconut Chocolate Chip Cookies {Giveaway}


My kids love cookies...if they have cake and cookies in front of them they almost always go for the cookies.  I don't bake too many cookies because usually they have so much butter and usually I can't stop myself from munching on them all day.  I saw this recipe on Mmm...is for Mommy and it only used 1/3 cup of butter so I pinned it.

Recently I received a sample of Coconut Oil from Tropical Traditions.


Lately I have been seeing a lot of bloggers using coconut oil in their cooking and baking.  I thought maybe I can use this as a substitute for butter in baking since coconut oil is in a solid state.  At first this seemed weird to me because growing up we always had coconut oil in the house but we kept it in the bathroom and used it on our hair.  The thought of using it in cooking at first seemed odd.  But when I got my sample I saw the texture and colour was very different from the one my mom would keep in the bathroom.

The coconut oil didn't cream with sugar the same way butter does and I was feeling like I made a huge mistake by doing this.  When I was preparing the baking pans the dough was a little crumbly and I had to pack it with my hands.  I believe the crumbly texture is due to the low fat content and not due to the coconut oil.  But the end result was really good.  They baked up fine and Hasan declared them delicious!  They had a mild coconut flavor due to the coconut oil.  These taste best eaten the same day.  After a couple of days they start to harden.

Coconut Chocolate Chip Cookies
Adapted from Mmm...is for Mommy

1 1/4 cup all-purpose flour
1 cup quick oats
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup coconut oil (should be solid)
3/4 cup sugar
1/2 cup packed light brown sugar (I had a little less)
1 tsp vanilla bean paste Halal Vanilla Powder or Extract
1 egg
1/4 cup mini semi-sweet chocolate chips

Preheat oven to 350 F.

Whisk together, flour, oats, baking powder, baking soda and salt.  Set aside.

In the bowl of an electric mixer fitted with the paddle attachment, add the coconut oil and beat on med-high speed for 1 minute.  Gradually add the sugars scraping down as necessary.  Increase speed to high and beat for 4-5 minutes, scrapping down the bowl periodically.  Beat in egg and vanilla bean paste.

With the mixer on low, gradually add the flour mixture until just combined.  Gently stir in the chocolate chips.

On a parchment lined baking sheet drop by rounded tablespoons.  The mixture was crumbly so I squeezed together the dough in my hand and placed on prepared baking sheet.  Gently press down to flatten.  I made about 2 dozen cookies.  If you are using a scoop pack the dough into the scoop and then transfer to baking sheet.

Cookies taste best the same day.  Keep in an airtight container.  The longer you keep them, the harder they get.

  7. I would love to try making these cookies. My kids love them to but, I deprive them of the store-bought ones:) Also, coconut oil is the newest ingredient in my kitchen and i love to add it raw to a lot of my no-cook desserts.

  17. I'm soooo happy that someone finally addressed the "coconut oil for hair not cooking" issue! LOL! I swear, everytime I read somewhere that someone is using coconut oil to cook/bake, I immediately think of the blue Parachute bottle of oil in our bathroom cabinet too hahaha.
    These cookies look absolutely delicious! I love the combination of chocolate chips and oatmeal, and I'm sure the coconut just takes it over the top :) Now if I can hopefully win this jar of it then I can make some LOL :)

  22. I LOVE coconut oil! Contrary to what you said, it actually has a high fat content, although it's the good fat that we want in our diet. I love using it for cooking and baking. I also burnt my hand really bad the other night and had a mild second degree burn. After soaking in the some cool water, I slathered it in coconut oil (and some other moisturizing oils) and the next day, you could barely tell I was burnt! It's amazing stuff.

    1. Thank you for your comment. Where I am talking about fat content I was trying to say the cookies are lower in fat..only 1/3 cup as compare to the usual 1 cup in most recipes. You are correct in saying coconut oil does have a high fat content.

  29. I haven't tried this brand but I recently started substituting virgin coconut oil for butter/fat in baking recipes and I love the subtle coconut flavor it gives to the end product. If I win I can't wait to continue to discover all the other dishes I can use it in (especially savory ones) - I want to definitely try and stir fry with it soon :)

    1. I've only used it in baking. In my baking it gave a slight coconut taste. Nothing overwhelming. I don't know how it would be in regular cooking.

  37. I use coconut oil for shaving my legs - it's the best! It's the only thing that doesn't break my sensitive skin out. I know ppl swear by it for lotion too ;)

    I've only ever made rice krispies with it - but your cookies look super delicious!

  43. I noticed in your recipe that you said the that the longer you keep the cookies the harder they get. I have a solution for that. Your recipe uses 1-/14 cups flour. Use half flour and half corn starch. The cookies will be softer when you have them longer.
