Japanese Zucchini and Onions

This recipe is really quick to make.  The most time consuming part of this recipe is peeling the zucchini into strips.  It tastes great on it's own.  You can easily halve this recipe.


I adapted it from a recipe I found at AllRecipes.com.  I added garlic, omitted the teriyaki sauce and increased the soya sauce.



Japanese Zucchini and Onions

3 tbsp olive oil
2 medium onions, thinly sliced
4 cloves garlic, minced
4 zucchini, peeled lengthwise with a potato peeler
4 tbsp soya sauce
2 tbsp toasted sesame seeds
1/2 tsp sesame oil
salt and freshly ground pepper

Heat olive oil.  Add onions and garlic.  Cook until translucent.  Add zucchini and cook for a couple of minutes.  Add soya sauce, sesame seeds and sesame oil.  Cook until zucchini is done and water is gone.  Season to taste with salt and freshly ground pepper.
